Whether it’s tailgating or homegating, fans of the Buffalo Bills are known to be elite tier when it comes to food. Wingin’ It returns for it’s eighth season of Mad Hatter-esque recipes, taking inspiration from the Buffalo Bills and their opponents.


Blueberry wing sauce

It’s time for a game against the New England Patriots, which means this week’s theme as it always is for the Patriots is cheating and taking shortcuts. This recipe’s shortcut is that I’m only giving you a wing sauce to save myself some time. You’re free to figure out how to cook or buy wings to toss into it.

For the flavor, I learned that Maine is the blueberriest state in the country, and Maine is part of New England so here we go. This flavorful sauce is thick like barbecue, but tingles like Buffalo sauce and can easily be scaled up for heat if you want. Blueberries may not be considered a high-pectin fruit, but compared to most other wing sauce ingredients they’re very high in the stuff, so make sure you’re paying attention to what your aim is on this as the sauce only gets stickier with cooking.


Blueberry Wing Sauce

Serves: 2-4
Active Time: 10 min
Total Time: 20 min

Ingredients

1/2 pint blueberries
2 Tbsp unsalted butter
1 Tbsp brown sugar
pinch of cinnamon
1/2 cup hot sauce

You will need: Sauce pan, rubber spatula, fork/slotted spoon (optional)
  1. Add blueberries and butter to sauce pan on MED; stir until butter is melted.
  2. Stir brown sugar and cinnamon into pan thoroughly.
  3. Cook 10-15 min, stirring frequently and scraping sides down with a rubber spatula.
  4. Stir in hot sauce; continue cooking until sauce achieves desired thickness.
  5. Optional: remove blueberries with fork or slotted spoon.
  6. Toss wings in sauce and enjoy!

Wingin’ It Tips

I don’t really have too much for tips this week. You can play around with the sugar I suppose. I used very little, all things considered. Adding more would likely bring it to be more blueberry forward, as my final result was more subtle than the vibrant purple/brown would indicate.

For heat, I think this wound up being what most would consider a medium equivalent. Adding more butter at the end would bring that down. For the other direction, you can always add a bit of your favorite weaponized sauce.
