Whether it’s tailgating or homegating, fans of the Buffalo Bills are known to be elite tier when it comes to food. Wingin’ It returns for it’s eighth season of Mad Hatter-esque recipes, taking inspiration from the Buffalo Bills and their opponents.


Buffalo Chicken Goetta

This isn’t my first Cincinnati recipe, but I’m a bit bummed that I hadn’t stumbled upon goetta before this season as it’s truly unique and frankly, quite a bit better than skyline chili (though my version was good). A recipe designed as a solution to the age-old dilemma of stretching meat when food is scarce, this oats and sausage hybrid manages to become completely its own thing. I swap out the traditional pork to use ground chicken and steer this in a fairly obvious Wingin’ It direction.

As a word of caution, it’s highly unlikely you are prepared for just how much food this recipe will make. If you follow what I have below, you better have a lot of help to eat it. On the plus side, it’s ultimately a very easy recipe to put together with fantastic results.


Buffalo Chicken Goetta

Serves: I dunno… 20?
Active Time: 1 hour
Total Time: At least 12 hours

Ingredients

7 1/2 cups water
3/4 cup hot sauce
2 bouillon cubes (beef)
2 Tbsp honey
2 tsp salt
2 1/2 cups steel cut oats
1/2 bulb garlic, minced
1 medium-sized onion, minced
1 tsp ginger powder
1/4 tsp nutmeg
1/4 tsp ground cloves
1 Tbsp black pepper
1 lb ground beef
1 lb ground chicken

You will need: Large stock pot, 11” x 7” cake pan, plastic wrap, skillet (or griddle), a bunch of friends.
  1. Add water, hot sauce, bouillon cubes, honey, salt, and oats to stock pot; bring to a boil while stirring frequently.
  2. Reduce heat to LOW and cover pot. Let mixture gently simmer for about 90 min, stirring about every 15 min.
  3. Add the rest of the ingredients to the pot and stir until well blended.
  4. Bring to a boil and stir for about one min.
  5. Reduce heat to low and allow to cook for about 1 hour, stirring every 10-15 min. Mixture should be moist but without any visible water pooling at the top. If any water remains, increase heat to MED until it reaches correct consistency (see below).
  6. Pour mixture into greased cake pan and gently press down with a spoon.
  7. Cool mixture on stove top then cover with plastic wrap and place in refrigerator overnight.
  8. When ready to cook: Remove from refrigerator and slice as shown below (one cut down the middle in the longer direction of the cake pan, and thick slices at least half-inch-thick cut from that).
  9. Preheat skillet or griddle to MED; place slice of goetta into skillet (or on griddle) and cook for about 7 min.
  10. Carefully flip and cook for about 6 min.
  11. Remove from pan and enjoy.
